Cauliflower Mash

I haven't met anyone who doesn't like mashed potatoes. Since this is one of my daughter's favorite dishes, I had to make a version that is keto-friendly for her (and the whole family of course) but that she will actually eat lol. Good thing that cauliflower is white and not green because she used to say that green is not a girl color so she refuses to eat them. We can win certain battles but I certainly won't win this one just yet.


I experimented with various ways to make Cauliflower Mash and this is the best version I've made yet. You may also double this recipe if you have a big family to feed.



Here's the recipe:


Ingredients:


1 head cauliflower or 1 bag cauliflower florets 2 cloves garlic 2 tbsp butter 1/4 cup Parmesan cheese, grated 1/4 cup heavy cream Garlic salt and pepper to taste Steam the cauliflower florets with the garlic. Once the vegetables are soft, put them and the rest of the ingredients in the blender and blend until smooth like the consistency of mashed potatoes. Enjoy with your favorite main dish!
