Keto Italian Style Meatballs

I've been using this recipe for quite some time and every time I make it, the dish is gone fast! I have to give credit to the original creator, I breathe I'm hungry blog, for the actual recipe for the meatballs and we use Mario Batali's marinara sauce recipe. It's totally worth making the marinara sauce from scratch as it elevates the quality of the dish tremendously. I will include recipes for both below.


I've used shirataki noodles in the past but for this dish, I decided to try Great Low Carb's Penne pasta which I found makes for a really great pasta substitute that also pleases both kids.

For the meatballs:


  • 1.5 lbs ground beef (80/20)

  • 2 Tbl fresh parsley, chopped

  • 3/4 cup grated parmesan cheese

  • 1/2 cup almond flour

  • 2 eggs

  • 1 tsp kosher salt

  • 1/4 tsp ground black pepper

  • 1/4 tsp garlic powder

  • 1 tsp dried onion flakes

  • 1/4 tsp dried oregano

  • 1/2 cup warm water

NOTE: You may double this recipe and still make the same amount of sauce if you have a big family or eating this dish for a few meals).


For the marinara sauce (makes 4 cups):


  • 1/4 cup extra-virgin olive oil

  • 1 Spanish onion, diced

  • 4 cloves garlic, thinly sliced

  • 3 tbsp chopped fresh thyme

  • 1/2 med carrot, finely shredded (or just add a couple of tbsp stevia to taste as another option)

  • 2 28-oz cans whole tomatoes (we use San Marzano)


Instructions:


  1. Combine all of the meatball ingredients in a large bowl and mix well.

  2. Form into fifteen 2″ meatballs.

  3. Bake at 350 degrees (F) for 30-40 minutes or until you see browning at the top of the meatballs.

  4. In a 3-quart sauce pan, heat the olive oil over medium heat. Add the onion and garlic and cook until soft and light golden brown, 8-10 minutes. Add the thyme, carrot (or stevia) and cook until the carrot is quite soft, about 5 minutes.

  5. Add the tomatoes, with their juice, and bring to a boil, stirring often. Lower the heat and simmer until as thick s hot cereal, about 30 minutes. Season with salt.

  6. Put all the meatballs in the marinara sauce and let simmer for another 10 minutes to let the flavors mesh well together.
