Keto Spicy Chicken


This Keto Spicy Chicken gives you a little bit of heat and a whole lotta flavor. The side dish is Creamy Lemony Green Beans (I would eat this side dish on its own it's so good lol) by the Diet Doctor and they pair perfectly with each other. This is a dish you can marinate ahead and cook quickly. Perfect for those busy weekday nights!


INGREDIENTS:


2–3 pounds boneless chicken thighs⁠


MARINADE:


1/2 cup oil⁠

1/4 cup lemon juice⁠

2 tbsp white vinegar⁠

1 garlic cloves, minced⁠

1 teaspoon chili powder⁠

1 teaspoon paprika⁠

1 teaspoon cayenne⁠ (this is mild, add another teaspoon if you like it spicier)

1 teaspoon oregano⁠

1/2 teaspoon ground ginger⁠

1/2 teaspoon pepper⁠

2 teaspoons salt


INSTRUCTIONS:⁠

1. In a large bowl, mix together marinade ingredients.⁠

2. Add chicken and toss until all the pieces are evenly coated. Cover & refrigerate minimum 30 minutes.⁠

3. Discard marinade and add chicken tenders to the air fryer. Turn air fryer to 380 degrees and cook 15 minutes. Flip the chicken and cook an additional 10-15 minutes.⁠

Note: If you don't have an air fryer, an alternative method is to put all the chicken along with the marinade in a baking pan then put in the oven at 350 for 30 minutes. Finish the chicken so that it has a "crust" by pan frying them for 2-3 minutes each side on the stove.
